This easy recipe is bound to be a whole family favorite! It is cheesy, full of fiber and protein, and perfect for meal prep. The savory flavors of chicken enchiladas are unbeatable. 100% enchiladas are one my top favorite comfort foods. 

I love including at least one crockpot meal per week in my meal prep rotation. This chicken enchilada casserole recipe is the perfect recipe for that spot. It's so delicious and full of flavor. Don't wait to try this quick and easy recipe - make tonight the night! 

Crockpot chicken enchilada casserole ingredients

Gather these simple ingredients from your local grocery stored you'll be good to go:

  • chicken breast
  • enchilada sauce
  • green chiles
  • black beans
  • onion
  • shredded Mexican cheese
  • corn tortillas
  • Toppings: cilantro avocado, Greek yogurt, sour cream, jalapenos

How to make a crockpot chicken enchilada casserole

This slow cooker enchilada casserole couldn't be easier! Follow these instructions to make this yummy casserole:

  • Gather all the ingredients.
  • Place chicken breasts, enchilada sauce, green chilies, black beans, and onion into the crockpot.
  • Cook on high for 4-5 hours (or low for 8 hours) until the chicken is cooked through.
  • Shred the chicken using 2 forks. Mix well.
  • Add the cut tortilla strips & ½ of the cheese to the crockpot, stir, and top with the remaining shredded cheese.
  • Add the lid and let cook for 30 minutes, until the cheese is melted.
  • Serve with cilantro, avocado, jalapenos, greek yogurt, green onions or your favorite toppings.

Crockpot chicken enchilada casserole substitution ideas

There are plenty of substitution options for this recipe: 

  • Enchilada sauce: Use whichever enchilada sauce is your favorite! Green enchilada sauce, red enchilada sauce, homemade enchilada sauce.
  • Black beans: Use pinto beans if you don't have any black beans on hand. 
  • Cheese: Cheddar cheese or monterey jack cheese would be delicious in this casserole. 
  • Tortillas: Whatever tortillas you have or like best will be just fine in this recipe. Flour tortillas, yellow corn tortillas, gluten-free, or a mix. 

How long does a enchilada casserole last in the fridge?

This enchilada casserole will last in an airtight container for up to 5 days in the fridge. After you make the recipe, you can separate the casserole into six equal servings to make your dinners quicker.

  • 1 can green chiles

    Oh my goodness I have to be honest. I was not too excited to make this because I’m not a big red enchilada sauce fan but holy cow is this amazing… Does not feel like an overpowering taste or anything it’s the perfect amount of everything! you’ve done it again Jordo!
