Gather these simple ingredients for a quick breakfast for the entire family!
- pancake mix (I use Kodiak Cakes)
- eggs
- bananas
- almond milk
- vanilla
- mix-in's (chocolate chips, blueberries, walnuts, etc)

How to make muffins with pancake mix
Follow these instructions to bake these delicious muffins for an easy breakfast recipe.
- Preheat oven to 350 degrees.
- Spray muffin tin with cooking spray and set aside.
- In a large bowl, mash bananas with a fork or whisk.
- Whisk in eggs, almond milk, and vanilla until well mixed.
- Stir in pancake mix to wet ingredients, just to combine. (Don’t over-mix or the batter won’t rise well)
- Chop any filling ingredients.
- Mix ¾ of the filling ingredients into the batter and stir.
- Pour muffin batter evenly across the 12 spaces of the muffin tin.
- Sprinkle the remaining ¼ of the filling ingredients on top of the muffins.
- Bake at 350 for about 20 minutes, or until middle is cooked through.
- Let cool and enjoy!

These muffins would also be great to throw and seal in a freezer bag and store in the freezer. Muffins last in the freezer for 3 months. To reheat, thaw completely at room temperature or heat on high in a microwave for about 30 seconds. It would be a good idea to double or triple the full recipe, freeze, and whip these out on busy mornings.

Delicious and easy! I used Kodiak too and am glad for a bit more protein in a bread-type breakfast (which I do prefer over eggs in the morning). I used cow’s milk and mini chocolate chips.
