Pancake mix muffins

If you find yourself with an overabundance of pancake mix, this is the perfect recipe for you! It mixes the unmistakable flavor of traditional pancakes with the grab-and-go nature of a muffin. These are sure to be a big hit with the whole family.

Pancake mix muffins ingredients

Gather these simple ingredients for a quick breakfast for the entire family!  

  • pancake mix (I use Kodiak Cakes)
  • eggs
  • bananas
  • almond milk
  • vanilla
  • mix-in's (chocolate chips, blueberries, walnuts, etc)

How to make muffins with pancake mix

Follow these instructions to bake these delicious muffins for an easy breakfast recipe. 

  • Preheat oven to 350 degrees.
  • Spray muffin tin with cooking spray and set aside.
  • In a large bowl, mash bananas with a fork or whisk.
  • Whisk in eggs, almond milk, and vanilla until well mixed.
  • Stir in pancake mix to wet ingredients, just to combine. (Don’t over-mix or the batter won’t rise well)
  • Chop any filling ingredients.
  • Mix ¾ of the filling ingredients into the batter and stir.
  • Pour muffin batter evenly across the 12 spaces of the muffin tin.
  • Sprinkle the remaining ¼ of the filling ingredients on top of the muffins.
  • Bake at 350 for about 20 minutes, or until middle is cooked through.
  • Let cool and enjoy!

How to meal prep this recipe

To meal prep this great breakfast, simply make according to instructions and place in an airtight container until you're ready to eat. If your family is anything like mine, these won't last long! 

These muffins would also be great to throw and seal in a freezer bag and store in the freezer. Muffins last in the freezer for 3 months. To reheat, thaw completely at room temperature or heat on high in a microwave for about 30 seconds. It would be a good idea to double or triple the full recipe, freeze, and whip these out on busy mornings. 

Can you make muffins with pancake mix?

Yes! You're at the right place if you're asking this question. These pancake mix based muffins are an easy way to diversify your favorite pancake mix. 

Kodiak pancake mix muffins

For this recipe, I use Kodiak pancake mix. I love Kodiak pancake mix because there are 15 grams of protein per serving! 

Also, there are a ton of different flavors to pick from within the Kodiak brand. Some of my favorites are: Cinnamon Oat, Chocolate Chip, and Buttermilk and Honey. There is even plant-based pancake powder, too!

What's the difference between pancake mix and muffin mix?

The main difference between pancake mix and muffin mix is the fact that pancake mix usually calls for more liquid. This recipe calls for almond milk. However, you could use whole milk, water, or whatever milk substitute you have on hand. 

Can you use pancake mix for other things?

You would be surprised all the delicious recipes you can make fro a store-bought pancake mix or homemade pancake mix! Here are some of the ideas I've thought of or come across:

Flavors for pancake mix muffins

Welcome to the fun part! Feel free to pick your favorite mix-ins and favorite pancake toppings to add to this recipe! The possibilities are endless. I've put together a list of my favorite toppings and best mix-ins for these delicious pancake muffins.

Toppings:

  • ripe bananas
  • maple syrup
  • fresh fruit
  • sprinkle of brown sugar

Mix-ins:​

  • mini chocolate chips
  • fresh blueberries
  • walnuts (or any kind of nut)
  • peanut butter

You can see the bottom of the recipe card for complete nutrition, but make sure to note that the nutrition facts do not include the optional mix-ins. Below, you can see the difference between with chocolate chips and without. 

If you use Prospre or My Fitness Pal to log your food, make sure you add whatever amount of mix-ins you decide to add for accurate tracking.

    Just made these today with blueberries. They are yummy! When I built the recipe in MFP one muffin was 3.8g of protein. If your info above for 2 muffins?

    Delicious and easy! I used Kodiak too and am glad for a bit more protein in a bread-type breakfast (which I do prefer over eggs in the morning). I used cow’s milk and mini chocolate chips.
