Sweet potato ground beef bowls are one of my go-to meal prep recipes! These bowls started trending on social media a few years ago and we've made constantly since!

What is a sweet potato ground beef bowl?

A sweet potato ground beef bowl is a meal prep bowl that's SO delicious. It's the perfect combination of protein, vegetables, and healthy fats. There's flavor from sweet potato, ground beef, avocado, and cottage cheese.

The staples of the sweet potato bowls are:

  • Ground beef
  • Sweet potatoes
  • Cottage cheese
  • Avocado
  • Hot honey

How to make a sweet potato ground beef bowls

It's actually SO easy to make sweet potato ground beef bowls! I usually add sweet potatoes and ground beef to a container, and then add toppings later. Here's how to prep:

  1. Peel and chop sweet potatoes. Coat with olive oil and season with salt, pepper, garlic powder, and onion powder.
  2. Bake at 400 for 25 minutes, flipping half way.
  3. Heat a large skillet and cook ground beef. When finished cooking, add taco seasoning (or seasonings of your choice)
  4. In a bowl, add sweet potatoes, ground beef, a scoop of cottage cheese, and some avocado. Top with hot honey.
  5. Enjoy!

sweet potato ground beef bowl substitution ideas

There's so many ways to make substitutions to these recipes. Here's a few ideas:

  • Ground beef - try ground turkey or ground chicken
  • Sweet potatoes - russet potatoes or red potatoes will work
  • Cottage cheese - you could use greek yogurt
  • Avocado - omit if you don't like avocado
  • Hot honey - use regular honey or try sriracha

How long does a sweet potato groun beef bowls last in the fridge?

This recipe lasts about 5 days in the fridge once it's cooked. I have made this for meal prep and will reheat and enjoy all week! 

The key to storing is to make sure that all of the food is cooled completely before adding to containers. Store each meal in a sealed, airtight container. I like to split them into meal prep containers so it's easy to reheat.

How to meal prep this recipe

This recipe is absolutely perfect for meal prep! When using this recipe for meal prep, just separate the recipe out evenly into 4-6 containers, depending on how big of servings you prefer. 

Make sure you store the airtight containers in the fridge. When you're ready to eat, simply grab one, reheat, and you're ready to go!

Note: You can either add the sauce right away and reheat the bowl with the sauce whenever or wait to add the sauce until after you reheat the bowl. 

How healthy are sweet potato ground beef bowls?

Sweet potato ground beef bowls are a great healthy recipe option! There's a balance of protein, carbs, and fats in each serving. 

Each serving has 34 grams of protein and definitely keeps you full! If you want more protein, you could make the recipe with an extra ½ pound of lean ground beef or extra cottage cheese.
