Chicken salad is its whole own food group here at Jordo's World. Seriously, I love chicken salad for so many reasons. First of all, it is so tasty and filling. Secondly, it is super easy to throw together for a quick meal or for a whole week of lunches!
This Thai chicken salad is no exception. Topped with cilantro and a delicious homemade peanut sauce, the flavors are off the charts with this recipe. It is filled with crispy carrots and crunchy peanuts so the textures are not what you're used to with a classic chicken salad. I promise you will not regret trying this delicious new recipe!
Thai chicken salad ingredients
You'll have two categories of ingredients to collect! For the actual chicken salad and then for the delicious peanut sauce!
CHICKEN SALAD
- grilled chicken breast
- green cabbage
- carrots
- green onion
- cilantro
- peanuts chopped
- Optional: avocado for topping
PEANUT SAUCE
- peanut butter
- soy sauce
- maple syrup
- sesame oil
- sriracha
- water
How to make Thai chicken salad
After gathering your ingredients, follow these instructions to get the chicken salad put together.
- Add all of the chicken salad ingredients (not the peanut sauce ingredients) to a large bowl. Stir.
- In a separate bowl, make the sauce. Add all sauce ingredients except the water to the bowl and mix well. Add 3 tbsp water and stir before adding 3 more tbsp water. Stir until sauce is creamy and smooth.
- Pour the sauce over the chicken salad ingredients. Mix well until salad ingredients are completely coated.
- Chill in the fridge until ready to serve.
- Serve with crackers, rice cakes, bread, veggies, or whatever you prefer.
Substitution ideas

- Dressing: If you don't want to make your Thai dressing at home, you could use a store-bought version.
- Carrots: Use chopped celery if you don't have carrots or don't care for them.
