Turkey burgers are sandwiches made with burger patties that utilize ground turkey as the primary ingredient (rather than ground beef, of course). Truthfully, they have a reputation for being less... good than a regular burger.
So, is the reputation deserved? Maybe, but only because some people decided to make some really boring, bland burgers out of turkey.
I'm here to advocate for a better turkey burger. I've already proven my dedication to this cause with my Chipotle Lime Turkey Burger. This Bacon Gouda Turkey Burger (BGTB) recipe is the next step toward a world with turkey burgers that are actually worth eating.

So, what goes into these bacon gouda turkey burgers? It's actually pretty simple:
- ground turkey (I use 85% lean)
- salt & pepper
- gouda cheese
- bacon
- buns
- red onion
- optional: BBQ sauce
Does gouda go on a burger?
It absolutely does. This ubiquitous, versatile cheese is the perfect tool for rounding out the flavor profiles of this burger.
Because turkey does not impart a terribly strong flavor, what you decide to put in and on the patty will dictate the taste of the dish.
What are the healthiest turkey burgers?
It's sometimes assumed that turkey burgers are a much healthier choice than, say, ground beef. The extra lean nature of this turkey makes it a healthy choice over certain types of ground beef, but don't expect the turkey-for-beef substitution to magically make something good for you! Look to the other ingredients and the portions, for example.
How do you make bacon gouda turkey burgers?
This one's pretty quick to throw together. It looks something like this:
- Start by cooking the bacon if it’s not already cooked. (Easily cook the bacon in the oven on 350 for 20 minutes).
- Heat a skillet over medium-high heat.
- Lightly brush buns with oil and let cook until toasted.
- Form the ground turkey into four 1-inch-thick patties. Season with salt and pepper. grill over high heat, turning once, until nearly cooked through, about 10 minutes.
- Add the patties to the heated skillet. Cook for about 8-10 minutes, turning once, until burgers are cooked through.
- Top the patties with a slice of gouda cheese, cover with a lid, and let the cheese melt for about a minute.
- On top of a bun, add the burger patty, red onions, bacon, and BBQ sauce. Enjoy!

My son keeps asking me if I remembered to get Gouda cheese anytime I come home from the grocery store, because… his follow up question is “so when are we going to make those Gouda Turkey Bacon burgers again?!” To say this recipe was a hit in our house is an understatement!
