Buffalo Chicken Bites

Some things taste better as a bite. These delicious buffalo chicken bites are no exception: easy to make, baked in the oven, and extraordinarily pop-able. You & your BFFs will love them!

Something you'll learn pretty quickly is that I'm a fan of bite-size food.

Egg whites? Pretty good. Egg white bites? Oh yeah.

Pancakes? Love 'em. Pancake bites? Even better!

Chicken bites are right up in that mix. Healthy buffalo chicken? Very important. But these buffalo chicken bites? Game-changer.

Baked > Fried (for these bites!)

When you think of chicken bites, you might think of something like popcorn chicken or boneless chicken wings. One big difference between those items (which are super yummy) and these buffalo chicken bites is the cooking method.

Instead of being fried, these scrumptious buffalo chicken bites are baked in the oven in two parts. First, they're cooked with their breading to develop a nice crispy exterior. Then, they're taken out, tossed in the sauce, and put back in to finish the baking process.

Sound like a hassle? I promise it's super easy. You'll surprise yourself with how quickly these buffalo chicken bites appear—and maybe even more by how quickly they disappear!

What are Buffalo Bites made of? (ingredients)

These ingredients come together to produce these delicious bites:

  • chicken breast (cut into 1-inch pieces)
  • eggs
  • almond milk
  • Panko breadcrumbs
  • garlic powder
  • onion powder
  • cayenne
  • paprika
  • salt
  • pepper
  • Franks Buffalo Sauce

How to Make Buffalo Chicken Nuggets

Here's how to make buffalo chicken bites:

Prep

  • Preheat the oven to 375 degrees.
  • Prepare a large baking sheet by covering with tinfoil. Place a wire cooling rack on top of the tinfoil. Spray the rack with cooking spray. (The wire rack will help to evenly cook all sides of the chicken! If you don't have a wire rack, you can flip the chicken half way).
  • In another large bowl, add all of the dry ingredients (breadcrumbs, garlic powder, onion powder, paprika, cayenne, salt, and pepper). Stir until mixed well.
  • Cut the raw chicken breast into 1 inch, nugget-size pieces. (Try to make them similar sizes so they cook evenly).
  • In a large bowl, crack two eggs. Add 1 tbsp of almond milk and whisk well.

Coating the chicken

  • Dunk the chicken pieces into the eggs. Coat well.
  • Use two forks or a pair of tongs to pick up the chicken (let the egg excess drip off) and move to the bowl of dry ingredients.
  • Roll the chicken pieces in the dry ingredients so they are all coated well.
  • If you don't have large bowls, you might need to do this in small batches so all chicken is coated evenly.
  • Place the coated chicken pieces on the wire rack. Spread out as much as possible.
  • Spray the tops of the chicken pieces with cooking spray.

Cooking the chicken

  • Bake for about 15-20 mins, until the internal temp of the chicken is 150.
  • Place the chicken pieces into a large bowl. Pour the buffalo sauce over the top of the chicken pieces. Shake and stir until chicken is evenly coated. (Add more or less sauce depending on heat preference).
  • Put the chicken pieces back onto the wire rack and baking sheet, and cook for another 5 minutes (or until internal temp is 165).
  • Serve with ranch, blue cheese dip, or your favorite dipping sauce.
  • Enjoy!

What goes with Buffalo Chicken?

These buffalo chicken bites pair nicely with the trappings of traditional buffalo wings: celery, dipping sauce of choice, maybe even some french fries... whatever floats your boat!

That said, these bites would also mix well as a protein choice for a salad, on top of rice, or in any other environment you can imagine. They're good everywhere, because they're just good.

There are 6 servings in this recipe. The number of bites will vary based on how big you cut the chicken. I have about 10 bites per serving. To know the exact nutrition, weigh all of the chicken pieces after cooking and divide by 6 servings - that number will be the exact grams per serving.

This chicken is so good. I made it in the air fryer and normally the breading falls off but this breading stayed on and was super crispy. These are going to be a staple in our home!
