These pancake sausage bites are a delicious and healthy breakfast idea! This 3-ingredient recipe is perfect for meal prep and busy mornings.

pancake sausage bites
Is it just me, or are bite-sized foods better than regular-sized foods?! There’s this phrase that “everything is bigger in Texas” and I think that even though I am a Texan, my Midwest roots aren’t buying it so I am more inclined towards smaller things. ANYWAY, regardless of why I like bite-sized items, these pancake sausage bites are my new favorite breakfast!
These pancake sausage bites are so fluffy and delicious! Every bite is packed with soft pancake and pieces of sausage. Not only are you going to get awesome flavor in every bites, but these bites are packed with protein. Each serving is 230 calories and contains 18 grams of protein. This healthy breakfast recipe is great for all ages. I promise your kids will like them too!
This recipe only requires 3 ingredients so it’s quick, easy, and perfect for meal prep. I like to make a batch of these on the weekend and heat them up during the week so they are ready for busy mornings. Dip them in syrup or take them to-go!

WHAT INGREDIENTS DO I NEED?
The recipe only requires 3 ingredients! I love recipes that are EASY and use what I already have in the pantry and this recipe definitely meets those requirements.
- Kodiak Cakes Power Cakes Mix – Kodiak Cakes is the only pancake mix I ever use. I love the flavor, the nutritional components, and how easy it is to make. I use the classic Buttermilk flavor for this recipe, but you could use whatever mix you like the best!
- Turkey Sausage Links – I use a box of pre-cooked turkey sausage links for this recipe, but you can use whatever kind of meat you like best. To ensure the sausage is evenly distributed throughout the bites, I chop them into small pieces.
- Water – You’ll need water to mix with the pancake mix. For the ratio, you will use a little less than the amount of mix.
- Syrup – Using syrup for dipping is totally optional!

what substitutions can i make?
This recipe is absolutely one where you can make substitutions. Here are a few options:
- Pancake Mix – I like to use Kodiak Cakes, but you can use whatever kind of pancake mix you already have!
- Turkey Sausage – This is my preference of breakfast sausage, but you can swap for whatever kind of breakfast sausage links you want.
- Syrup – I like to use some syrup for dipping, but you can totally add some syrup or vanilla to the batter before you bake the bites!
WHAT EQUIPMENT DO I NEED?
The main piece of equipment you need for this recipe is a muffin tin. If you have a mini muffin tin, that would work as well.

HOW DO I MAKE THIS RECIPE?
This recipe is SO easy. Here’s what you’ll do:
- Preheat oven to 350 degrees.
- Spray muffin tin with cooking spray and set aside.
- Combine pancake mix and water. Mix to combine. (Don’t over-mix or the batter won’t rise well!)
- Chop sausage links into small pieces.
- Mix 3/4 of the sausage pieces into the batter and stir.
- Pour batter evenly across the 12 spaces of the muffin tin.
- Sprinkle the remaining 1/4 of the sausage pieces on top of the muffins.
- Bake at 350 for about 20 minutes, or until middle is cooked through.
- Enjoy with a side of syrup!

This recipe was all the things!! Simple, tasty, and nutritious!! 10/10 would recommend.
I made these for the first time today and they’re AMAZING. Couldn’t be simpler to make and SO tasty and filling. I’m a vegetarian so I used vegan sausage and it was the perfect high-protein comfort breakfast. I think it’ll feel like Christmas morning waking up tomorrow knowing I have leftovers! 🤩
Easy and delicious! These are a quick and easy breakfast item that is great for when you’re on the go or in a rush! I made them this morning and they really hit the spot! I used Aldi Chicken Breakfast sausage and it was wonderful! Because my pack only had 7 sausage links, I reduced the pancake mix to 1 and 1/3 cup and reduced the water to 1 cup. This adjustment made 9 muffins. Thank you for such a great recipe, Jordo!
These are super yummy and so easy to make!
These are the perfect breakfast option! Super easy (only 3 ingredients, 1 of those being water), fast (less than 30 mins) and DELICIOUS!
These are a really great and simple option for breakfast. Toddler approved! My son helped prepare them and ate two as soon as they we’re ready! Jordo is such a light on the internet and I will DEFINITELY be trying more of her creations.
I made these for the first time the other day and she was not kidding when she says these go FAST! I already made us a second batch! They are so simple, so easy, and so so good. I added 1/4 cup of syrup to add a little sweetness and to keep me from using so much syrup for dipping, and I think it adds just the right amount of sweetness. (And adds only about 4 carbs per serving)
My husband loves them, I love them and they are toddler approved. 😂😍
Love love love this recipe!! Easy to make and I have breakfast for a few days! Plus the macros are great. 🎉🎉
this breakfast recipe was so quick and simple and SO YUMMY! I love that it’s packed with protein yet so delicious. Will be making this again very soon 🙂
Love this recipe! Super easy to make and tastes great! Reminds me of a healthy version of McDonald’s Sausage McGriddle.
These are super easy to make & they’re delicious! I’d highly recommend giving them a try. I’m already planning on making another batch!
These are so good! I only had chocolate chip kodiak cakes but they were still awesome and my picky 5 year old thought he was getting a treat! Mom win!! Will be making these again!!
So quick and easy and YUMMY!
I LOVE these!! The recipe is super easy, the bites are very filling and add the right macros! I highly recommend giving them a try! Thanks Jordo!! 👊🏽

This recipe is perfect!!! So easy. Can be made ahead. And delicious! I’m always on the lookout for high protein breakfasts that can be heated up quickly in the morning and these are the best! Two in my family love them with sausage and the other two love them with just mini chocolate chips. You must try these!!!!

Quick and easy to make! Makes for a quick breakfast on the go or just have one for a snack. Will definitely be making again!
I enjoyed these bites all last work week! They were easy to make and made my breakfast process a breeze. I used the Aldi equivalent to the Kodiak mix. Perfect! Thank you!! I plan on making a batch tonight for the week!
This is such a great, quick recipe! I ate mine with a side of sugar free syrup. So delish! I love the substantial serving size as well!
Amazing! Prepped for my week! Thanks, Jordo!
AMAZING. This is the 4th recipe I’ve made from Jordo’s World and the 4th 5 star review. Super easy to make, and the perfect breakfast to meal prep. I added a scoop of pescience vanilla protein to the batter for some extra protein and they were delicious! Throw them in the air fryer for a few minutes this morning to heat them up – they were crisp, filling and delicious. 10/10 would recommend and definitely going to make this a staple for meal prepping!
Jordo the Genius! Seriously simple, seriously delicious. Made one batch to give them a try and fiance and I inhaled 2 each and were blown away. I proceeded to make a second batch right after. These will change my life.
My favorite snack prep to bring to work everyday! So easy and convenient and..yummy!!!
These are the best! They have become a weekly staple at our house, still going strong four weeks in a row! We always make a 2.5 x batch so it lasts for a full week of breakfast for two! A dash of cinnamon added to the batter is delicious as well.
