What makes a fajita a fajita?

A fajita is a classic Tex-Mex dish full of great flavor and flare. It is a dish with a grilled strip meat, traditionally served on a sizzling plate with peppers and onions. 

Tortillas are usually served alongside and you create your own tacos to enjoy. Fajitas are a great meal for the whole family, and I have created a sheet pan version that can be ready in just 15-20 minutes. All from the comfort of your own home!

If you've been around Jordo's World for a while, you know I absolutely love sheet pan meals. They are such an easy dinner idea, especially for busy weeknights or when you need to whip up something quick. 

These Easy Sheet Pan Chicken Fajitas are high-protein, have healthy ingredients, and are bound to be a crowd favorite. With just 6 ingredients, you probably have most of what you need lying around your kitchen now. The best part about this recipe are the endless options for toppings! Go crazy and add all of your favorites. 

You won't need hours to make this delicious meal, it is minimal prep and minimal stress. Make these easy chicken fajitas for dinner tonight!

  • boneless skinless chicken breast
  • bell peppers
  • red onion
  • fajita seasoning
  • tortillas
  • limes

How to make easy sheet pan chicken fajitas

​Sheet pan dinners are known for being quick and simple, and this is no exception! 

  • Preheat the oven to 400 degrees.
  • Lightly grease a large sheet pan with cooking spray.
  • Gather all the ingredients. Cut the peppers, onion, and chicken into thin strips.
  • Put the ingredients into a large bowl. Add olive oil and fajita seasoning packet. Toss well until chicken, pepper, and onion are evenly coated. Spread it into an even layer across the sheet pan (use a second pan if needed).
  • Cook for 25-35 minutes, or until the internal temperature of the chicken is 165 degrees.
  • Remove from the oven, squeeze fresh lime juice, and top with cilantro.
  • Serve with warm tortillas and any desired toppings.

Easy sheet pan chicken fajitas substitution ideas

There are plenty of options for substitutions for these easy sheet pan fajitas. Keep in mind that two of the things that really make a fajita a fajitas is a grilled meat, and a stripped pepper.

  • Chicken breast: Like I said above, use any meat for this dish. Two other popular choices are a steak, or shrimp. 
  • Fajita seasoning: ​Taco seasoning will work just fine, too.
  • Tortillas: Use your favorite tortillas. Corn tortillas, flour, gluten free - whatever you like best! You could even use lettuce wraps with this fajita recipe, or create a chicken fajita bowl.
  • Limes: ​Fresh lime juice is the best option, but you could use bottled or even juice from a lemon if you're in a pinch.
  • Toppings ideas: Sour cream, avocado slices, fresh cilantro, hot sauce, shredded cheese

How long do chicken fajitas last in the fridge?

These delicious sheet pan chicken fajitas will last up to 5 days in the fridge. Make sure you store your fajita leftovers in an airtight container before putting in the fridge. 

For best results, store the tortillas in a separate airtight container. When you're ready to enjoy, simply reheat the fajitas in the microwave to your liking. 

How to meal prep this recipe

This recipe would be a perfect meal prep to make for easy weeknight dinners. Simply make according to instructions and wait for the fajitas to cool. 

When they have cooled, split into 6 equal servings and place in airtight containers for fridge storage. When it's meal time, take out, warm up, and enjoy!

What do you eat with fajitas?

Typically, fajitas are served with warm tortillas, sour cream, salsa, and guacamole. Some other options for complimentary sides are black beans, Spanish rice, or refried beans.  

One of my favorite things about this recipe is that you can really make it your own with the toppings. A quick list of ideas would include: avocado slices, fresh cilantro, hot sauce, shredded cheese, or fresh lime juice.

Are fajitas healthy or unhealthy?

As always, the words healthy and unhealthy are very subjective. It all depends on a person's individual body and goals. This recipe does include healthy ingredients. Fresh meat and veggies are great options for anyone.

Please note the nutrition facts for this recipe do not include tortillas. A low-carb option of the recipe would be to ditch the tortillas and enjoy as burrito bowls. 

What is the difference between carne asada and fajitas?

The main differences between the two come down to the cut of steak used in traditional dishes, and the two distinct seasonings of the dishes. Carne asada is usually a larger cut of flank steak, and fajita is a thinner cut.

Carne asada involves using a marinade and fajitas typically have a lighter seasoning and are served alongside veggies and tortillas.
