Easy pumpkin pancakes

I love pumpkin season! Seriously, I am totally here for all of the pumpkin baked goods. It only made sense for me to find an easy way to start my day with pumpkin. So imagine a bite of extra fluffy pumpkin spice pancakes, melted chocolate chips, and pumpkin peanut butter. Are you drooling? In an effort to combine my love for baked pancakes and pumpkin, I present these easy pumpkin pancakes!

These easy pumpkin pancakes are so fluffy and delicious. Every bite is packed with pumpkin pancakes, chocolate chips, and pumpkin peanut butter! Not only is each bite packed with flavor, but it's also full of nutrients! These pancakes are actually healthy and packed with protein. This easy pumpkin pancake recipe only requires 3 ingredients and 20 minutes. It’s perfect for a healthy breakfast, brunch, or even late-night treat. It's also great for your next special occasion or meal prep, so let's get baking!

What ingredients do I need?

The recipe only requires 3 ingredients! I love recipes that are EASY and use what I already have in the pantry and this recipe definitely meets those requirements.

  • Kodiak Cakes Pumpkin Flax Mix – Kodiak Cakes is the only pancake mix I ever use. I love the flavor, the nutritional components, and how easy it is to make. I use the Pumpkin Flax flavor for this recipe, which gives all of the pumpkin spice flavor!
  • Mini Chocolate Chips – I use mini chocolate chips because I want there to be chocolate chips in every single bite. However, you could use whatever chocolate chips you have in your pantry or like the best!
  • Pumpkin Spice Peanut Butter - RXBAR makes a Pumpkin Spice Peanut Butter that is incredible drizzled all over these pancakes! If you don't have that flavor of peanut butter, any will work great.

What equipment do I need?

The main piece of equipment you need for this recipe is a cake pan. I like to use a 9 x 9 inch square pan, but you can use a different size based on what you have. Keep in mind that depending on how much mix you use, a smaller pan will create an extra fluffy pancake bake.

How do I make this recipe?

The process for these easy pumpkin pancakes is identical to my baked pancakes recipe, except for the flavor substitutions.

  • Preheat oven to 350 degrees.
  • Mix 2 cups of Kodiak Cake mix with 2 cups of water.
  • Stir in 2 tablespoon of mini chocolate chips.
  • Line the cake pan with parchment paper or grease well with cooking spray.
  • Pour mix into the cake pan.
  • Bake at 350 degrees for 10 minutes, then sprinkle with remaining mini chocolate chips.
  • Continue baking for another 10 minutes or until the top is light brown and the pancake is baked all the way through.
  • Take the cake pan out of the oven.
  • Drizzle peanut butter on the baked pancakes.
  • Cut into pieces and enjoy!

Notes

Note: I used the Buttermilk Power Cakes mix, but you can use whatever Kodiak Cakes mix you can find! Every single flavor will turn out amazing.
