Freezer breakfast sandwiches
The breakfast sandwich has deep roots in the United States reaching as far back as the Civil War. If you ask me, a sandwich that has a history that long is a sandwich worth keeping around. There are as many variations of breakfast sandwich as you can think of, and this recipe sticks to the classic formation. English muffin, eggs, cheese, and meat - you can't go wrong!
Now you could always venture out to your local breakfast joint and pick up a breakfast sandwich, but this recipe is going to be healthier and much cheaper! With just a few ingredients, you'll have 12 breakfast sandwiches ready to go for the week or even longer if stored in your freezer.

These sandwiches are perfect for meal prep and delicious! I used sausage and pepper Jack cheese with whole grain muffins and 🙌🏼🙌🏼 can’t wait to see how they reheat!
I did end up with too much egg 🤔 but delicious all the same!
Jordan Smith says
I'm so glad the sandwiches turned out for you! You could totally double the egg for a little more next time. This recipe totally works for all accommodations!
Kelly says
Any tips for preventing the cheese from becoming a puddle? Every time I heat, thawed or from frozen, the cheese pretty much turns to liquid.
Jordan Smith says
Hi Kelly. Hmmm, I'm wondering if you're reheating too long? What method of reheating have you been doing and for how long? What kind of cheese have you been using?
Hannah says
Can you use frozen protein (sausage patty) and if so, do you leave it frozen when you assemble sandwich? Thanks!
Jordan Smith says
Yes you can use frozen! And I leave them frozen while I'm assembling.
Leslie says
LOVE these! These made breakfast so easy this past week. I threw my sandwiches wrapped in parchment right in the air fryer (flap down so the paper didn’t fly inside) and they came out so crisp and cheesy. Yum! Hubby loved them too!
My eggs did fall apart a little when I ate them so I’m going to try a little less milk the next time I make them. And I learned that pouring the mixture into the pan while it’s already in the oven was the easiest way to not spill!
Definitely a game changer for meal prep! I plan to keep these in the freezer for emergencies!
Mindy says
We have been making these sandwiches on REPEAT! My little girls LOVE them and we've found a nutritious alternative to their prior sugary breakfast! Thank you, Jordan for this recipe!

This is a favorite in our house - we love house easily this can be adjusted for more protein or switching out the English muffins for a higher fiber option.
ashley says

Wow these sandwiches are LIFE! My husband particularly likes them & has eaten them many days in a row now & is not tired of them! They also freeze REALLY well (wrapped in foil then in a freezer Ziploc bag) & just re-heat in the microwave for 1 minute:) YUMMY! We used sausage and cheddar cheese, can't wait to play around with other meats and cheeses, too!
Jordan Smith says
These are truly a staple. The combinations are endless and they ALWAYS taste good!
Annie says
My mom meal-prepped these sandwiches for my postpartum recovery. They were perfect immediately post-birth and are a lifesaver now as I transition back to work and have very little time to sit and eat breakfast in the mornings! I never knew about cooking the eggs in the sheet pan before making these...genius!
sarah says
I make these often for breakfast prep! They are sooo easy and my 6yo daughter enjoys them to. Simple ingredients and so easy to reheat!
(I have also made these and given them to a new mama friend to stash in her freezer. This is a great recipe to gift as well!)
