- Meat: I use lean ground turkey for this recipe, but you could use ground sausage, ground beef, or even grilled chicken. Just remember that whatever you change will affect the end product!
- Vegetables: I use spinach and zucchini in this recipe, but you could pick other vegetables that you have on hand! Some other vegetables that I think would fit well in this recipe are broccoli, cauliflower, or squash.
- Cheese: You can make this recipe dairy-free by omitting the cheese entirely or adding some dairy-free cheese.

How to make Sweet Potato Ground Turkey Skillet
Follow these ingredients and thirty minutes later you'll thank your past self!
- Preheat oven to 400 degrees.
- Cover a sheet pan with aluminum foil and set aside.
- Chop the sweet potatoes, zucchini, and onion. Place in a large mixing bowl.
- Add 1 tablespoon of avocado oil. Stir until everything is well coated.
- Spread evenly over the baking sheet. Sprinkle with salt and pepper.
- Place the sheet pan in the oven and bake or 30 mins, flipping half way.
- After the veggies have been baking for 15 mins, heat a large skillet on stovetop.
- Add turkey and garlic. Cook until the meant is browned. Sprinkle with salt and pepper.
- Once the veggies are done, take them out of the oven and add them to the skillet.
- Stir in spinach.
- Sprinkle cheese evenly over the top of the skillet.
- Cut the heat to low. Place a lid over the skillet. Let sit for 10 minutes or until cheese is melted.

This Ground Turkey Sweet Potato Skillet is perfect for meal prep. It reheats very easily and doesn't turn soggy in the fridge. Just put it in the microwave for 1-2 minutes and it's ready to go.
To bulk up the protein in this recipe, you could fry some eggs and add them in. You could also serve over rice, over a bed of lettuce, or it stands alone as a meal perfectly well.

How long do I need to pan fry ground turkey?
First, preheat the skillet to medium-high heat. Add ground turkey. Cook for 10-15 minutes, until well done. The turkey will be brown (no more pink) and internal temperature will be 165 degrees.

It really depends on the shape the sweet potatoes are in and also how you're cooking the sweet potatoes. For example, you can cook sweet potaotes whole, diced, cubed, and in a myriad of other ways. You can cook sweet potatoes in a skillet, in the oven, or in the microwave.
This recipe calls for baking the sweet potatoes in the oven after dicing them. Personally, i just don't think they get cooked enough in a pan so the oven is easier. You will cook the sweet potatoes for 30 minutes.

This was great! I wouldn't have thought zucchini and sweet potatoes went together, but it was delicious!
I used frozen onions, diced sweet potatoes, zucchini/summer squash mix, and spinach to save on prep. In the future, I'll add the spinach a bit earlier to help it thaw easier, but other than that, the recipe worked great with the frozen veggies too!
