Peanut butter & jelly pancakes

These peanut butter & jelly pancakes give off total PB&J Uncrustables vibes. This recipe is a twist on the original extra fluffy and delicious baked pancakes. Each bite is packed with peanut butter, jelly, and fluffy deliciousness that will bring you back to childhood. This pancake recipe only requires 3 ingredients and 20 minutes. It’s perfect for a healthy breakfast, brunch, or for meal prep!

What ingredients do I need?

The recipe only requires 3 ingredients! I love recipes that are EASY and use what I already have in the pantry and this recipe definitely meets those requirements.

  • Kodiak Cakes Power Cakes Mix – Kodiak Cakes is the only pancake mix I ever use. I love the flavor, the nutritional components, and how easy it is to make. I use the classic Buttermilk flavor for this recipe, but you could use whatever mix you like the best!
  • Peanut Butter – I recommend using natural peanut butter for this recipe. Natural peanut butter will be more drippy and creamy so it’s easy to drizzle all over the pancake.
  • Jelly - You can use any kind of jelly you have -- grape, strawberry, whatever.

What equipment do I need?

The main piece of equipment you need for this recipe is a cake pan. I like to use a 9 x 9 inch square pan, but you can use a different size based on what you have. Keep in mind that depending on how much mix you use, a smaller pan will create an extra fluffy pancake bake.

Can you put jelly on pancakes?

Absolutely. For this recipe, I mix jelly inside of the pancakes. I also add a fruit syrup on top!

Why are my pancakes flat instead of fluffy?

The key to fluffy pancakes is to not over-mix! Simply mix the pancake mix and water to combine. This will create fluffy pancakes!

How do I make this recipe?

The recipe instructions are almost identical to the original baked pancakes recipe, just with a few topping swaps.

  • Preheat oven to 350 degrees.
  • Mix 2 cups of Kodiak Cake mix with 2 cups water. Stir to combine (don’t over-stir!)
  • Grease the cake pan with cooking spray.
  • Pour mix into the cake pan.
  • Scoop ¼ cup peanut butter into a microwave safe bowl and heat in the microwave for 30 seconds.
  • Use a teaspoon to scoop peanut butter and jelly on the top of the mixture. Use the end of a knife to swirl the syrups through the top of the mixture.
  • Bake at 350 for 20-25 mins or until pancakes are cooked all the way through.
  • Take the cake pan out of the oven.
  • Drizzle additional syrups on the pancakes.
  • Cut into pieces and enjoy!
  • Enjoy!
