I love pancakes! Seriously, I could eat them every morning for the rest of my life and be totally thrilled about it. What I love just as much as pancakes is s'mores. The toasted marshmallow, chocolate, and graham cracker combination GETS me. In an effort to combine my love for baked pancakes and s'mores, I present these s'mores pancakes!
These s'mores pancakes are so fluffy and delicious. Every bite is packed with marshmallows, chocolate chips, and graham crackers! BUT WAIT. There pancakes are actually filled with nutrients! That’s right, these are actually healthy and packed with protein. This s'mores pancake recipe only requires 4 ingredients and 20 minutes. It’s perfect for a healthy breakfast, brunch, or even late-night treat. It's also great for your next special occasion or meal prep, so let's get baking!
What ingredients do I need?
The recipe only requires 4 ingredients! I love recipes that are EASY and use what I already have in the pantry and this recipe definitely meets those requirements.
- Kodiak Cakes Power Cakes Mix – Kodiak Cakes is the only pancake mix I ever use. I love the flavor, the nutritional components, and how easy it is to make. I use the classic Buttermilk flavor for this recipe, but you could use whatever mix you like the best!
- Mini Chocolate Chips – I use mini chocolate chips because I want there to be chocolate chips in every single bite. However, you could use whatever chocolate chips you have in your pantry or like the best!
- Mini Marshmallows - A warm, toasted marshmallow is a requirement for a s'mores treat. We may not have a bonfire, but the oven will toast the marshmallows to perfect.
- Graham crackers - Mix a few crushed graham crackers into the mix so you get a piece of s'mores flavor in every bite!
What equipment do I need?
The main piece of equipment you need for this recipe is a cake pan. I like to use a 9 x 9 inch square pan, but you can use a different size based on what you have. Keep in mind that depending on how much mix you use, a smaller pan will create an extra fluffy pancake bake.
How do I make this recipe?
The process for these s'mores pancakes is very similar to my baked pancakes recipe.
- Preheat oven to 350 degrees.
- Mix 2 cups of Kodiak Cake mix with 2 cups of water.
- Stir in half of the mini chocolate chips, marshmallows, and graham crackers.
- Line the cake pan with parchment paper or grease well with cooking spray.
- Pour mix into the cake pan. Sprinkle the remaining toppings on the mix.
- Bake at 350 degrees for 20 minutes or until the top is light brown and the pancake is baked all the way through.
- Take the cake pan out of the oven.
- Cut into pieces and enjoy!

I made this the way the recipe is written and it was WAY too thin. I even used the Kodiak brand too so not sure what happened. Re-did it making the batter according to the directions on the box plus the s’mores additions and it was perfect. Has become a new go to. I like the consistency of this better than sheet pan pancakes too!
