You're probably thinking: pancakes in the microwave... does that really work?! And my answer is YES, it totally works. Not only that, but it's darn tasty as well.
Can you pancakes in the microwave?
YES! The idea for this recipe sparked on a busy morning when I woke up craving pancakes. I didn't have enough time to wait stand in front of the stove cooking an entire batch, so I threw some mix in a bowl, pressed start on the microwave, and crossed my fingers.
Two minutes later I opened the microwave to a giant fluffy pancake bowl.
Look: the pancake-in-a-mug category of recipes has been around for a while. I didn't invent the concept, and I had a hunch this was possible before I gave it ago. BUT I love it so much and it's become such a staple of breakfast time around here that I had to join the club!

What ingredients do i need?
- Kodiak Cakes Power Cakes Mix - I love Kodiak Cakes mix because it adds extra protein and taste delicious, but you can use any pancake mix for this recipe.
- Water - A little water must be added to the pancake mix before placing in the microwave for cooking.
- Baking powder - This ingredient ins't required! Adding a little baking powder will make the pancake bowl more fluffy, but it still works without it.
- Mix-ins - You can add chocolate chips, fruit, or whatever else you can think of into the pancake bowl before you heat in the microwave.
- Toppings - After the pancakes are finished cooking, add butter, syrup, peanut butter, or whatever you love on pancakes!
Substitution ideas
- To make gluten-free: Use any gluten-free pancake mix
- To make dairy-free: Use water and a dairy-free pancake mix
