It is a very popular recipe for romantic dinners, date nights, or special occasions. Marry Me Chicken is made up of juicy chicken and a richly seasoned creamy sundried tomato sauce. 

Marry Me Chicken is a bit of a viral recipe at the moment, but I love it enough to keep it around for the long haul. The flavors are unbeatable and it makes such a comforting meal that the whole family is sure to love. 

Crockpot Marry Me Chicken Pasta

This pasta dish is full of protein and covered in a delicious creamy sauce. I love a slow cooker chicken recipe, and this one is one of my absolute favorites. 

​This recipe use simple ingredients and so easy to prepare. Simply throw most of the ingredients into your crockpot, set a timer, and come back when the juicy chicken breasts are ready to shred. Cook up some fresh pasta and mix everything together. Voila! That's all it takes to have Crockpot Marry Me Chicken Pasta hot and ready for your dinner. 

Crockpot marry me chicken pasta ingredients

To make this Crockpot marry me chicken recipe, head to the grocery store and stock up on these ingredients: 

  • boneless, skinless chicken breast
  • chickpea pasta
  • low sodium chicken broth
  • reduced fat cream cheese
  • half & half
  • sundried tomatoes diced
  • parmesan cheese
  • garlic
  • paprika
  • oregano
  • onion powder
  • salt
  • pepper

How to make crockpot marry me chicken pasta

Use these easy to follow instructions to make this delicious dish with incredible flavors: 

  • Place the chicken breast in slow cooker.
  • Mix together the broth, seasonings, and sundried tomatoes in a mixing bowl. Pour over the chicken breast.
  • Cook on high 2-3 hours or low 4-5 hours, until the chicken is cooked and reaches an internal temperature of 165 degrees.
  • Take the cooked chicken out of the crock pot and shred.
  • Add the chicken back to the crockpot.
  • Stir in the neufchatel cheese and half & half. Cover and cook on low for 20-30 minutes, until the cheese is melted.
  • While the cheese is melting, cook the pasta noodles. Cook according to the package instructions.
  • Stir spaghetti noodles into the crock pot mixture.
  • Top with red pepper flakes & parmesan.
  • Enjoy!

Crockpot marry me chicken pasta substitution ideas

If you're in need of a substitution, check out this list for ideas. There are many delicious ways to make this easy dinner, so don't worry if you need to make a couple of changes. 

  • Pasta: I use a chickpea pasta to add protein to this recipe, but you can use whatever pasta you have around the house. I do suggest a penne pasta. 
  • Cream cheese: My cream cheese of choice is a reduced fat variety. You could use a normal full fat or even dairy-free if needed.
  • Grated Parmesan cheese: Substitute for a dairy-free Parmesan if need be. 
  • Chicken broth: I use a low sodium chicken broth but any chicken stock you have at home will be just fine. You could even substitute bone broth to add more protein to the dish. 
  • Half & half or heavy cream: There is a dairy-free substitute for heavy cream! 
  • Red pepper flakes: If you aren't the biggest fan of a bit of spice, I wouldn't add the red pepper flakes at the end.
  • Optional: Adding some chopped fresh basil as you're ready to serve would be incredibly delicious.

How long does this pasta last in the fridge?

This easy chicken dinner will last in the fridge for 5 days. Make sure you place in an airtight container before storing in the refrigerator. 

How to meal prep this recipe

Crock pot marry me chicken is such an easy weeknight dinner. However, it would also work so well as a meal prep recipe to stock your fridge for the week. 

Simply make the recipe according to the instructions. When it is finished, separate into 6 equal portions and store in the fridge until you're ready to eat. Heat up in the microwave for 1- 2 minutes or warm on the stove top over medium-low heat in a skillet. 

What goes well with crockpot marry me chicken pasta?

This delicious dinner is bound to be a family favorite in no time, so let's flesh it out to make it a well rounded, full fledged meal. You can never go wrong by adding some garlic bread on the side with a pasta. 

Also, some fresh basil on the top will really enhance the rich flavors in this dish. I love a side salad with my pasta. Some fresh steamed or cooked vegetables would also be delicious. Broccoli, green beans, or Brussels sprouts would easily make this recipe a complete meal.  

How long does it take to slow cook chicken?

I suggest putting chicken in the crockpot on high for  a cooking time of 2-3 hours or low 4-5 hours. You know your crockpot best though! 

Some take a little longer or may cook on the faster side. Just make sure that the chicken is fully cooked to 165 degrees Fahrenheit before shredding and adding the pasta.

      Hey Brooke, I don't have the specific numbers! One way to calculate this would be to weigh the entire recipe when you make it and divide by 6, that will give you the exact number for the serving size.

    Mine comes out really watery. I think just one cup of broth is more ideal than one and a half

      Iain, I'm sorry it didn't turn out quite right for you! I typically let mine sit and cool, and that typically thickens it up. However using one cup of broth would do the trick as well! Thanks for the feedback!
