Funfetti Mug Cake

Whether you are looking to add some extra protein into your day, or to satisfy a craving for something sweet, this recipe is perfect for you. It's a healthier version of a mug cake! Who could say no to that?

This funfetti mug cake is delicious, quick, and easy. You only need 3 ingredients and 5 minutes to make this recipe your reality. This mug cake is high in protein - 11g in just one mug!

What is funfetti cake mix?

Funfetti cake mix is simply a boxed vanilla cake with sprinkles added into the dry mix. More sprinkles, more fun!

As promised, only 3 ingredients (plus some optional ones):

  • funfetti cake mix 
  • vanilla protein powder (I use Clean Simple Eats -- use JORDO for a discount)
  • 3 tbsp milk
  • Toppings: whipped cream, rainbow sprinkles, anything you want

How to make a funfetti mug cake

This recipe is so easy and so quick. Your funfetti mug cake will be here before you know it!

  • In a small bowl, add the cake mix, protein powder, and milk. Stir until combined and smooth.
  • If the mixture is dry, add another tablespoon of milk to make it wet to be similar to a brownie batter consistency.
  • Cook in the microwave for 75 seconds.
  • Top with whipped cream, extra sprinkles, and any extra toppings.
  • Enjoy!

Why are mug cakes mushy?

Mug cakes have gotten a bad rap for the rubbery, mushy consistency they sometimes have. This can come from adding too much oil, or just over-cooking the cake in general.

This recipe adds milk instead of oil, which will help combat that mushy consistency. We're aiming for slightly-sticky, gooey, and perfect, not rubbery and mushy!

Are mug cakes supposed to be gooey?

As I said above, the texture of a mug cake should be slightly-sticky, gooey perfection. Most mug cakes are slightly gooey and that's the beauty of the mug cake!

You will know that this mug cake is done when it's still slightly wet in the middle when it pops out of the microwave. Then get ready to dig into your delicious gooey Funfetti mug cake.

How do I add protein to a mug cake?

If you are asking this question, then you've come to the right place and prepare to be amazed! You can add protein powder to cake mix as part of the mug cake recipe.

Protein powder does tend to make the end result drier. However, this recipe adds a perfect amount of milk to counter the dryness and create a delicious result. Dessert can be both tasty and protein rich and this recipe proves it!

You can add protein to all kinds of desserts, and even substitute protein powder for flour. Some of my favorite ways to add protein into dessert is with a frosty, peanut butter cups, or yummy protein bars.

Does heat destroy whey protein?

In short, no - heat does not destroy whey protein. The drastic change in temperature may alter the form, it won't take away any of the nutritional benefits of the protein powder.

Since heat does not affect the protein's properties, you can consider this recipe as a fantastic way to hit your protein goals!

How much water do you put in a protein mug cake?

While creating this recipe, I found that 3 tablespoons was a sweet spot considering the amount of cake mix and protein powder used. You want the 'batter' to be liquidy and runny, and this was the perfect amount.

Remember, I use almond milk in this recipe, not water. You really could use water or any type of milk, though!

  • 1 scoop vanilla protein powder 12.6 grams (I use Clean Simple Eats -- use JORDO for a discount)
  • 3 tablespoon milk I use almond milk
