These homemade breakfast burritos are perfect to make and then freeze. They are a great idea to bring to a family welcoming a new baby, experiencing a medical need, or just in need of some extra love. I love keeping these delicious burritos stocked in my freezer for quick and easy breakfasts on days we just don't have lots of time. You will not regret adding this recipe card to your stash!

Breakfast burritos substitution ideas
If you're looking to make a substitution, look no further:
- Low-carb tortillas: For this recipe, I use low-carb flour tortillas, but any form of tortilla will work just fine. You could use gluten-free, corn, flour, whatever!
- Sausage: You could substitute any breakfast meat here and be just fine. Chopped bacon, ground pork, etc.
- Cheese: Pick any cheese. I love cheddar in this recipe, but you could use dairy-free, Mexican blend, pick your favorite one, or use whatever you have on hand.
- Toppings: Pick your personal favorites! Some starting ideas are: avocado, hot sauce, extra veggies, sour cream, green onions, and pickled red onions.
How to make healthy breakfast burritos
Follow these easy instructions for a delicious healthy breakfast burrito!
- Heat a large skillet over medium heat.
- Spray with cooking spray.
- Add diced onion and turkey sausage.
- Cook until meat is brown and cooked through. Drain excess grease. Cut heat to low.
- In a separate bowl whisk together eggs, egg whites and seasonings.
- Pour the egg mixture into the skillet with the meat. Stir frequently and cook until eggs are cooked through scrambled.
- Sprinkle the scramble mixture with cheese and let sit for about a minute, until melted. Turn off heat and let cool.
- Lay out 8 burrito tortillas.
- Separate the scramble evenly into the tortillas.
- Roll into sealed burritos.
- Wrap in foil and store in a sealed bag in the fridge.

To meal prep, make according to instructions. Wrap burritos in aluminum foil and store in a sealed bag or airtight container in the fridge. See below for instructions on how to freeze!
How to reheat this recipe
No matter the time of day, when you're ready for your next meal, simply take out the burrito and reheat in the microwave until your desired temperature. Adding a damp paper towel on top of the burrito before you microwave will help seal in moisture. A frozen burrito will take longer to heat than one stored in the fridge.
If you're reheating from the fridge, I'd suggest heating in the microwave for about 1-1:15 minutes. If you're reheating from the freezer, try microwaving for about 2-4 minutes. You could also reheat from the freezer with an oven, toaster, or air fryer. If using the oven, I suggest baking at 350 degrees for 15-20 minutes.
Don't forget to add your favorite toppings and different fillings after you've heated your burrito. Adding a side like a fruit salad or Greek yogurt would be delicious, too!

Hi Bob, I like to do a mix of eggs & egg whites for the flavor & protein! Egg whites add a higher protein content but eggs still provide great flavor. You can totally change up the recipe to do all egg whites, all eggs, or whatever ratio you prefer!

How do you recommend heating up after being in the fridge vs in the freezer?

Hi Anne, from the microwave I just microwave for about 1-1:15 minutes. From the freezer, if using the microwave to heat, try heating for about 2-3 minutes. You could also use an oven, toaster, or air fryer to reheat. For the oven I'd suggest about 350/375 for 15 minutes. For an airfryer, it'd probably just take a few minutes. I hope that helps!
