- Cheese: Pick any cheese. I love cheddar in this recipe, but you could use dairy-free, Mexican blend, pick your favorite one, or use whatever you have on hand.

- Heat a large nonstick skillet over medium heat.
- Add in slices of bacon.
- Cook until bacon is cooked to preferred doneness. Move pieces of bacon to plate with a paper towel. Once bacon is cool enough, chop into small pieces.
- Cut heat of skillet to low. Drain most of the excess grease.
- In a separate bowl whisk together eggs, egg whites and seasonings.
- Pour the egg mixture into the skillet. Stir frequently and cook until eggs are cooked through scrambled.
