I absolutely love a bowl for dinner. They are so easy, usually topped with a delicious sauce, and so easy to meal prep or use for leftovers. This Sweet Potato Burger Bowl is no different. Complete with a homemade, delicious sauce, this dish has all the flavors of a burger. 

This deconstructed burger bowl is full of filling protein and perfect for meal prep. Your whole family is going to devour this meal, and it is so easy to make. Feel free to add in your favorite burger toppings to really make it your own! 

There are many side options for these healthy burger bowls. Think of whatever your favorite sides are for a classic burger.

Special Sauce

The special sauce I throw together is so yummy, easy, and is made with pantry staples. Here is what I use: ⅓ cup mayo, 2 tbsp ketchup, 1 tbsp mustard, 1 tsp apple cider vinegar, ½ tsp onion powder, a dash of salt and pepper. Let me know what you think in the comments!

How to make sweet potato burger bowls

Follow these instructions to make a dish the whole family will devour.  

  • Preheat the oven to 400 degrees.
  • Peel and dice sweet potatoes. Add to a large bowl.
  • Toss sweet potatoes with avocado oil and spices.
  • Pour onto a lined baking sheet.
  • Bake for 30-40 minutes, mixing half way.
  • While the sweet potatoes are cooking, heat a large skillet with oil over medium-high heat.
  • Add meat. Cook until brown, about 8 minutes.
  • Add seasonings and mix.
  • Once the meat and sweet potatoes are done cooking, assemble the bowls.
  • Make layers of lettuce, sweet potatoes, meat, red onion, tomatoes, pickles, and top with special sauce.
  • Enjoy!

Sweet potato burger bowls substitution ideas

  • Ground beef: To make this dish vegan, you could do a base of black beans as an ode to a black bean burger. Or use ground turkey to replicate a turkey burger. You could even use ground chicken.  
  • Sweet potatoes: If sweet potatoes aren't your thing, try this recipe with normal potatoes. 
  • Diced tomatoes: ​Use cherry tomatoes instead!
  • Special sauce: Use the recipe above to make the special sauce I love to use in this recipe. You could also pick up a mayo based or cream based sauce at the grocery store pre-made like this one
  • Add your favorite burger toppings: Add cheddar cheese, a fried egg, avocado, some bacon, or diced white onions. 

How long does a sweet potato burger bowls last in the fridge?

This recipe will last in a sealed container for up to 5 days in the refrigerator. Beware: there will likely be many clean plates after serving this dish and you may not have many leftovers to spare!

How to meal prep this recipe

This recipe is a great way to enjoy the taste and flavor of a classic burger all week long. To meal prep, simply gather all ingredients and follow the instructions to cook the bowls above. 

Separate the recipe into four equal servings and place into individual airtight containers. Store in the fridge for up to 5 days. Reheat when you're ready for a burger bowl.

Usually I'll pick a delicious, crisp side salad or some sauteed veggies. I also love some fresh fruit on the side of any dinner to round out the meal.

For the Meat

  • 1 lb lean ground beef
