Vegetarian egg bake substitution ideas
There are loads of possible substitutions for this vegetable egg bake:
- Eggs: Substitute egg whites if you're looking for less fat in this recipe.
- Milk: If you need this recipe to be dairy-free, use whatever milk substitute you have on hand. I would say almond milk would be the best substitute in this case.
- Veggies: Don't be shy about adding your favorite veggies to this dish. You could substitute in vegetables or add in all the extra veggies. Some of the other vegetables I thought about were zucchini, spinach, or kale. Adding an extra red bell pepper wouldn't hurt either!
- Add meat: If you're loving the idea of all the vegetables but can't imagine skimping out on the breakfast meats, add your favorite right on in! Bacon, sausage, turkey bacon, whatever will work. Just make sure the meat is fully cooked before adding it to the casserole.
- Cheese: Goat cheese, mozzarella cheese, dairy free cheese, sharp cheddar cheese....really, any type of cheese would be a great addition to this dish! There's nothing wrong with adding a little extra cheese to the top as well.

What goes well with an egg bake
There are so many delicious side ideas for an egg bake. I've included some of my favorite ideas here. For toppings, hot sauce, chopped green onions, or red pepper flakes would be delicious. Don't forget about a dollop of sour cream right on top!
As far as sides go, cottage cheese would up the total protein of your meal. Some fresh fruit or leafy greens on the side sound wonderful. Lastly, crispy potato hash browns complement the flavors and textures in this dish so well.
