Pancake bowl

A pancake bowl is one extra fluffy pancake that fills an entire bowl. Rather than making several flapjacks on a skillet on the stove, a pancake bowl is made right in the microwave.

You're probably thinking: pancakes in the microwave... does that really work?! And my answer is YES, it totally works. Not only that, but it's darn tasty as well.

Can you pancakes in the microwave?

YES! The idea for this recipe sparked on a busy morning when I woke up craving pancakes. I didn't have enough time to wait stand in front of the stove cooking an entire batch, so I threw some mix in a bowl, pressed start on the microwave, and crossed my fingers.

Two minutes later I opened the microwave to a giant fluffy pancake bowl.

Look: the pancake-in-a-mug category of recipes has been around for a while. I didn't invent the concept, and I had a hunch this was possible before I gave it ago. BUT I love it so much and it's become such a staple of breakfast time around here that I had to join the club!

What ingredients do i need?

  • Kodiak Cakes Power Cakes Mix - I love Kodiak Cakes mix because it adds extra protein and taste delicious, but you can use any pancake mix for this recipe.
  • Water - A little water must be added to the pancake mix before placing in the microwave for cooking.
  • Baking powder - This ingredient ins't required! Adding a little baking powder will make the pancake bowl more fluffy, but it still works without it.
  • Mix-ins - You can add chocolate chips, fruit, or whatever else you can think of into the pancake bowl before you heat in the microwave.
  • Toppings - After the pancakes are finished cooking, add butter, syrup, peanut butter, or whatever you love on pancakes!

Substitution ideas

  • To make gluten-free: Use any gluten-free pancake mix
  • To make dairy-free: Use water and a dairy-free pancake mix

How do you make pancakes in the microwave?

  • Add pancake mix, water, and baking powder to a microwave-safe bowl. Mix well.
  • Add mix-in's like chocolate chips or fruit if you want!
  • Heat in the microwave on high for 2 minutes.
  • Top with toppings of choice and enjoy!

How long should you microwave pancakes?

I cook pancakes in the microwave for 2 minutes. You might need to change the amount of time depending on the heating of your microwave.

    so easy and delicious! I normally mix my kodiak cakes with egg whites and vanilla premiere protein for extra protein, but opted for water & baking soda for this version with some mini choc chips- delicious and perfect for a busy morning filled with client meetings. Love that I can do these at home or in the office! definitely going to become a go to!

    Life. Changer. What’s not to love about a delicious, fluffy pancake that is done in minutes and cleanup is even faster?! I love making this for my daughter on days we don’t have a ton of time or we have to hit the road. Easy to take with and eat in the car. Thank you!

    I’m not gonna lie…I was so skeptical of this recipe, but wanted to try it anyways because I’m always looking for a quick recipe post workout as I’m also trying to feed 4 little ones. This was so easy, but more importantly so incredibly delicious!!!! I’m going to make them for my kids today because half of mine was stolen yesterday haha.

    I was looking for a fast version of a pancake for my kiddos for before school. I’ve tried many pancake hacks like making the batter the night before, but his is the hack of all hacks! Seriously so fast! My kiddos (age 6 & 8) both said this was delicious …. With chocolate chips of course. Haha! This is going into my back to school breakfast rotation!
