Pancake bowl
A pancake bowl is one extra fluffy pancake that fills an entire bowl. Rather than making several flapjacks on a skillet on the stove, a pancake bowl is made right in the microwave.
You're probably thinking: pancakes in the microwave... does that really work?! And my answer is YES, it totally works. Not only that, but it's darn tasty as well.

YES! The idea for this recipe sparked on a busy morning when I woke up craving pancakes. I didn't have enough time to wait stand in front of the stove cooking an entire batch, so I threw some mix in a bowl, pressed start on the microwave, and crossed my fingers.
Two minutes later I opened the microwave to a giant fluffy pancake bowl.
Look: the pancake-in-a-mug category of recipes has been around for a while. I didn't invent the concept, and I had a hunch this was possible before I gave it ago. BUT I love it so much and it's become such a staple of breakfast time around here that I had to join the club!

This recipe has changed my life! It's so so easy to just pop in the microwave and have a high protein and carb breakfast, perfect before a run or workout. When I want a little less, I've made this with 1/3 cup each of mix and water. I usually omit the baking powder and it turned out great!
