These baked pancakes are extra fluffy and delicious! This recipe is healthy, easy, and ready in 20 minutes.

Baked pancakes
It shouldn't be a surprise I love pancakes because so many recipes you'll find here are variations of pancakes! One of my favorite pancake recipes is my easy pancake skillet. One piece of feedback I've heard about this recipe is that people want to make this recipe, but they don't have a cast-iron skillet. SO, until you decide to invest in a cast-iron skillet (which you totally should!), I have a variation for you try: baked pancakes.
These baked pancakes are so fluffy and delicious! Every bite is packed with chocolate chips, peanut butter, and nutrients! That's right, this is actually healthy and packed with protein. This baked pancake recipe only requires 3 ingredients and 20 minutes. It's perfect for a healthy breakfast, brunch, or for meal prep!
Y’all, I promise. This recipe for baked pancakes will give you confidence in the kitchen! It’s so quick and easy to make. It’s the perfect healthy yet still so delicious brunch or late-night dessert recipe. Let's get cooking!

What ingredients do I need?
The recipe only requires 3 ingredients! I love recipes that are EASY and use what I already have in the pantry and this recipe definitely meets those requirements.
- Kodiak Cakes Power Cakes Mix - Kodiak Cakes is the only pancake mix I ever use. I love the flavor, the nutritional components, and how easy it is to make. I use the classic Buttermilk flavor for this recipe, but you could use whatever mix you like the best!
- Mini Chocolate Chips - I use mini chocolate chips because I want there to be chocolate chips in every single bite. However, you could use whatever chocolate chips you have in your pantry or like the best!
- Peanut Butter - I recommend using natural peanut butter for this recipe. Natural peanut butter will be more drippy and creamy so it’s easy to drizzle all over the pancake. My favorite is RXBAR nut butter!
What equipment do I need?
The main piece of equipment you need for this recipe is a cake pan. I like to use a 9 x 9 inch square pan, but you can use a different size based on what you have. Keep in mind that depending on how much mix you use, a smaller pan will create an extra fluffy pancake bake.
How do I make this recipe?
The process for these baked pancakes is very similar to my easy pancake skillet recipe. There are just a few modifications for using a cake pan instead of a skillet.
- Preheat oven to 350 degrees.
- Mix 2 cups of Kodiak Cake mix with 2 cups of water.
- Stir in 2 tablespoon of mini chocolate chips.
- Line the cake pan with parchment paper or grease well with cooking spray.
- Pour mix into the cake pan.
- Bake at 350 degrees for 10 minutes, then sprinkle with remaining mini chocolate chips.
- Continue baking for another 10 minutes or until the top is light brown and the pancake is baked all the way through.
- Take the cake pan out of the oven.
- Drizzle peanut butter on the baked pancakes.
- Cut into pieces and enjoy!

I just made these this morning and am SO pleased! They turned out moist and fluffy and of course delicious! They were also loved by my husband and 12 year old (quite picky) son. It’s a true joy to find recipes that fit into my macro goals while also feeling indulgent. Thanks for the great recipe. Will definitely be making these again!

SO good! Such a big hit and very very easy to make. They are moist and fluffy just like a regular pancake. I will for sure be making these again! I also added peanut butter chips because you can never have too much peanut butter!
Stephanie says
@Becca,
Did you put eggs in the mixture? On the Kodiak cake box, it says to add two eggs.
Jordan Smith says
You don't need to add eggs! I just use water. But if you wanted to, you totally can!

I see so much love everywhere for Kodiak cakes. Waiting hopefully to see if they come out with a gluten free version. Curious what others who have celiac or gluten intolerance use that’s higher in protein?
Jordan Smith says
Kodiak Cakes does have a gluten-free mix!

I made these for a crowd and I wasn't stuck flipping pancakes all morning! I made two batches-one with fruit and topped with whipped cream and one peanut butter chocolate chip and topped with walnuts and bananas. Easy cleanup and a big win!
Alaina says
The best way to make pancakes for a group - absolutely game changing! Turn out just as delicious as regular pancakes, maybe even more fluffy. Thanks, Jordo!!
Jenna says
Hey Jordan! This recipe sounds super good. Have you ever tried making it with milk and eggs for extra protein? I know the Kodiak box has lots of variations for making them, but not sure if you have tried baking any of them. Thank you!!

Another winner! We had company this morning and I made this recipe for the first time. It was great. i decided not to add the peanut butter and let them add their own toppings + fresh berries. There’s one piece left for me tomorrow! Yum!
