These baked pancakes are extra fluffy and delicious! This recipe is healthy, easy, and ready in 20 minutes.

Baked pancakes
It shouldn't be a surprise I love pancakes because so many recipes you'll find here are variations of pancakes! One of my favorite pancake recipes is my easy pancake skillet. One piece of feedback I've heard about this recipe is that people want to make this recipe, but they don't have a cast-iron skillet. SO, until you decide to invest in a cast-iron skillet (which you totally should!), I have a variation for you try: baked pancakes.
These baked pancakes are so fluffy and delicious! Every bite is packed with chocolate chips, peanut butter, and nutrients! That's right, this is actually healthy and packed with protein. This baked pancake recipe only requires 3 ingredients and 20 minutes. It's perfect for a healthy breakfast, brunch, or for meal prep!
Y’all, I promise. This recipe for baked pancakes will give you confidence in the kitchen! It’s so quick and easy to make. It’s the perfect healthy yet still so delicious brunch or late-night dessert recipe. Let's get cooking!

What ingredients do I need?
The recipe only requires 3 ingredients! I love recipes that are EASY and use what I already have in the pantry and this recipe definitely meets those requirements.
- Kodiak Cakes Power Cakes Mix - Kodiak Cakes is the only pancake mix I ever use. I love the flavor, the nutritional components, and how easy it is to make. I use the classic Buttermilk flavor for this recipe, but you could use whatever mix you like the best!
- Mini Chocolate Chips - I use mini chocolate chips because I want there to be chocolate chips in every single bite. However, you could use whatever chocolate chips you have in your pantry or like the best!
- Peanut Butter - I recommend using natural peanut butter for this recipe. Natural peanut butter will be more drippy and creamy so it’s easy to drizzle all over the pancake. My favorite is RXBAR nut butter!
What equipment do I need?
The main piece of equipment you need for this recipe is a cake pan. I like to use a 9 x 9 inch square pan, but you can use a different size based on what you have. Keep in mind that depending on how much mix you use, a smaller pan will create an extra fluffy pancake bake.
How do I make this recipe?
The process for these baked pancakes is very similar to my easy pancake skillet recipe. There are just a few modifications for using a cake pan instead of a skillet.
- Preheat oven to 350 degrees.
- Mix 2 cups of Kodiak Cake mix with 2 cups of water.
- Stir in 2 tablespoon of mini chocolate chips.
- Line the cake pan with parchment paper or grease well with cooking spray.
- Pour mix into the cake pan.
- Bake at 350 degrees for 10 minutes, then sprinkle with remaining mini chocolate chips.
- Continue baking for another 10 minutes or until the top is light brown and the pancake is baked all the way through.
- Take the cake pan out of the oven.
- Drizzle peanut butter on the baked pancakes.
- Cut into pieces and enjoy!

I think my favorite thing about these is that I can make it one day and have it for breakfast the rest of the week! Such an easy meal prep food!

Have made these several times and can’t get enough of them. Sometimes I use fewer chocolate chips depending on my macros. Great meal prep recipe for easy breakfasts!

This is my go-to breakfast recipe. It’s super simple to prep and it tastes so good heated up! I don’t know how many times I’ve made them! I will keep making them too!

These were so good! We wanted to make breakfast for dinner and I had a box of kodiak cakes in the pantry. So much easier than making individual pancakes! I only made one change: I mixed in the peanut butter with the pancake mix instead of drizzling it on top. It also took mine about 40 minutes to bake all the way through, but all ovens are different. Just a heads up for timing. Overall it was so delicious + easy and I will definitely make it again!

This has become an easy staple to have on the side of a weekend breakfast or my favorite, breakfast for dinner! I even meal prepped this for the week paired with a side of sausage patties for extra protein. So delicious!

Going to make these tomorrow! I’m currently in a cut tracking macros. How much is the suggested serving size?
Jordan Smith says
The nutrition on the recipe card is for 1 serving and the entire recipe makes 4 servings. Feel free to adjust toppings or mix-in's based on the macros that work for your cut! The base of the recipe will stay the same. Hope that helps!
