Easy Beef Burritos

The perfect breakfast burrito coming at you straight from the comfort of your own home. This easy beef burrito recipe is full of flavor, texture, and will keep you full all morning. (Or evening! Let's face it, I am a big fan of breakfast for dinner, and these burritos are delicious at any hour of the day!)

Providing your body with necessary protein, carbohydrates, and plenty of healthy fats and vegetables, this is a well balanced meal all wrapped up in a single tortilla. These easy ground beef burritos are so easy to grab from the freezer and serve on busy mornings. Kids and adults alike love these burritos - they are great for the whole family! 

These easy beef burritos are perfect to make and then freeze. They last in the freezer for up to 30 days! They are a great idea to bring to a family welcoming a new baby, experiencing a medical need, or just in need of some extra love. I love keeping these delicious burritos stocked in my freezer for quick and easy breakfasts on days we just don't have lots of time. You will not regret adding this recipe card to your stash!

To make this delicious meal for the whole family, gather these ingredients. See below for substitution ideas.

  • tortillas
  • 93% ground beef
  • quinoa 
  • packet low sodium taco seasoning
  • corn 
  • black beans 
  • onion 
  • bell pepper 
  • jalapeno 
  • cheddar cheese 
  • garlic 
  • olive oil
  • toppings: cilantro, sour cream, whatever you like

How to make easy beef burritos

This beef burrito recipe is sure to be a hit with the whole family! Follow these instructions, and get started! 

  • Gather all ingredients. Wash & chop accordingly.
  • Wash and cook quinoa.
  • While quinoa is cooking, heat a large skillet over medium-high heat.
  • Add olive oil to the skillet.
  • Add garlic and onion. Cook for about 3 minutes, until translucent.
  • Add bell pepper and jalapeno. Cook for about 3 minutes, until peppers are soft.
  • Add ground beef to the skillet. Cook for about 8 minutes, until meat is fully cooked.
  • Add taco seasoning packet to the skillet. Mix well.
  • Add corn, black beans, and cooked quinoa to the skillet.
  • Mix really well until everything is combined.
  • Sprinkle the mixture with cheese and cilantro. Let sit for about a minute, until melted. Turn off heat and let cool.
  • Lay out 6 burrito tortillas.
  • Separate the scramble evenly into the tortillas, starting at the center of the tortilla.
  • Roll into sealed burritos.
  • Wrap in foil and store in a sealed bag in the fridge or freezer.

Easy beef burritos substitution ideas

Remember, when making substitutes to a recipe, the flavor, texture, and outcome can vary! However, there are various ways to make this recipe, and changes can be necessary based on dietary restrictions.

  • Ground beef: I opted for 93% ground beef,  but you can use your favorite or whatever you happen to have on hand. You could also substitute a ground turkey or pork, but just be prepared that it will really change the taste of these beef burritos.
  • Tortillas: I use flour tortillas, but you could use gluten-free, corn tortillas, whatever!
  • Cheese: To make dairy free, use a dairy free cheese. 
  • Taco seasoning: Homemade taco seasoning is actually really easy to make at home, and is a great substitute if you don't have a packet on hand.
  • Toppings: Don't be shy about adding all your favorite burrito toppings! See below for some great topping / additional filling ideas. 

How long does this recipe last in the fridge?

This delicious beef burrito will last in the fridge up to 5 days. However, don't forget these are great to store in the freezer and whip out whenever you're feeling hungry. They will last in the freezer for up to 30 days. Make sure to check below for instructions on how to freeze these easy beef burritos.

How to meal prep this recipe

To meal prep this great recipe, make according to instructions. Wrap burritos in aluminum foil and store in a sealed bag or airtight container in the fridge. See below for instructions on how to freeze. 

These are a great option for meal prep or to make and deliver to those in need of quick, easy meals. Think of families that just welcomed a new baby, someone going through a medical emergency, or maybe someone in your life going through a super busy season. Whenever I am taking a meal to a family, I love to add this recipe to the delivery. 

How to reheat this recipe

No matter the time of day, when you're ready for an easy breakfast or a quick dinner, simply take out the burrito and reheat in the microwave on a microwave-safe plate until your desired temperature. Adding a damp paper towel on top of the burrito before you microwave will help seal in moisture. A frozen burrito will take longer to heat than one stored in the fridge. 

If you're reheating from the fridge, I'd suggest heating the burrito in the microwave for a total time of about 1-1:15 minutes. If you're reheating from the freezer, try microwaving for about 2-4 minutes. You could also reheat from the freezer with an oven, toaster, or air fryer. If using the oven, I suggest baking at 350 degrees for 15-20 minutes. 

Don't forget to add your favorite toppings and different fillings after you've heated your burrito. Adding a side like a fruit salad or Greek yogurt would be delicious, too!

How to freeze easy beef burritos

To freeze this healthy breakfast, wrap burritos in aluminum foil or parchment paper and then place in a freezer bag. Put in the freezer and use for up to 30 days! These really are perfect for those busy mornings or accidental late wake-ups. Here are some ideas on the best ways to reheat frozen burritos! Also, see below for my personal recommendations.

Let's take a look at all the nutrition that these burritos offer you and your body. There is nearly 30 grams of protein per burrito. Protein keeps you feeling full and helps you build muscle. Carbs from the beans and tortillas give your body energy to support your body and physical activity.

There are many vegetables and beans in this recipe, adding key vitamins, minerals, and fiber to your diet. The bell pepper alone in this recipe contributes Vitamin C, E, A, potassium, and folate. The black beans add fiber, iron, and zinc.
