Everything Egg White Bites
So, not too get too philosophical, but what is everything?
Everything seasoning is a mix of seeds, powders, and salts mixed into a spice blend. It's delicious, and it's the best thing to happen to bagels since bread slicing (if you're from St. Louis).
If everything seasoning is great for bagels, it's INCREDIBLE for egg white bites, which become savory little handheld meals with a few shakes of the jar.
I've talked before about why I think egg white bites are so great, and this version of has become the new favorite around here. So, enough chitchat. Let's get to it!
Egg White Bites Ingredients
How does one make these egg white everything bites?
Here are the ingredients:
- Egg whites
- Nonfat cottage cheese
- Shredded cheddar cheese
- Bacon
- Everything seasoning (such as Trader Joe's Everything but the Bagel Seasoning)
We'll talk substitutes in a second, but I'm here to make a rule for this recipe: do not skip the everything seasoning. Get it from the store, make your own if no stores have it, but do not skip it. It's just the rules!

Substitution Ideas
Now that we know what you're not going to substitute...
Let's talk about modifications you might feel like making to this recipe.
- Add veggies: mixing in spinach or chopped peppers is always a welcome addition, though you might have to experiment with the watery nature of those ingredients.
- Swap meats: bacon not suiting you this time? Try little sausage crumbles, a fine ground meat, or just skip it entirely.
- Egg mixture: You can incorporate some whole eggs if you want some yolky goodness.

- Dietary restrictions: this recipe is Gluten Free. If you want it to be Dairy Free, use a DF cheese.

Egg White Bites Recipe
Here's how you actually produce the magic:
Prep
- Preheat oven to 350 degrees.
- Spray muffin tin really well and set aside.
- In a blender, add 1.5 cups egg whites and 1 cup cottage cheese together. Blend well.
- Evenly distribute the blended mixture into muffin tin.
- Sprinkle shredded cheese over each bite.
- Chop the 4 pieces of cooked bacon. Sprinkle bacon pieces evenly over each bite.
- Sprinkle about ⅛ teaspoon of everything but the bagel seasoning on each bite.
- Fill a baking dish with water and place in the oven.
Bake
- Add the muffin tin to the oven.
- Bake for 25-30 minutes.
- Let the egg white bites cool before removing from the tin. (This will help them set.)
- Enjoy!
Are these healthy?
I'll forever include the caveat that the question of what's healthy depends a lot on you: your nutritional needs, your goals, requirements, etc.
But, to oversimplify a little, these bites have a lot of what you want (protein) and not a ton of what you don't (fat). I find these are a great way to start of a day where I can hit my nutritional goals while staying well-fed and happy.

Storage?
I keep these bites anywhere from 3-5 days in a sealed, airtight container.
Are starbucks egg white bites low carb?
As of this writing, all Starbucks varieties have fewer than 15 grams of carbs per serving in their bites. My recipe has 5 grams, which is pretty darn good. Mostly protein and yummy flavor.
Why are these deflating?
This happens when the oven is too hot. They will puff up a lot while cooking and then shrink down and collapse when you take them out. When you take them out of the oven, let them cool really well or else they will crumble.

How do you keep these from getting stuck?
I try to spray down the muffin tin thoroughly with cooking spray before I get started. You could also try to use a really good nonstick pan or even silicone liners to avoid the stick.
How to reheat egg white bites?
I pop these bad boys in the microwave for 30-60 seconds (depending on your microwave). I find that that's all it takes for them to be hot and ready to enjoy, though I've also eaten them cold!

I haven't tried freezing these egg white bites. However, if I were going to do it, I'd make sure they cooled off completely before storing them in a plastic freezer bag. I've head of folks doing this with success. Let me know if you try it!
