It's hard to decide on the best part about these apple cinnamon waffles, but one of the things that keeps me making these are that they can be frozen and reheated. Want to make a big batch and keep enjoying them for the next couple of weeks? Go right ahead.

One other highlight is that this batter also makes for an excellent pancake. Feeding a group that can't decide between waffles and pancakes? Make them both with one batter and be everyone's hero.

Why are my waffles not crispy?

While people have different preferences for the texture of a waffle, most agree they want something that can stand up to some toppings without turning into mush. So, you've got some mush. What gives?

The truth is that every batter and every waffle implement is going to interact differently. You'll have to adjust settings, cook times, and even amount of batter based on what works best for your machine.

The good news about this experimentation? It gives you a lot of waffles.

  • low-fat cottage cheese
  • egg whites
  • vanilla
  • cinnamon
  • apple
  • optional toppings: whipped cream, butter, apples, cinnamon

Really? Cottage cheese???

Yep! Cottage cheese. In the waffles.

Just... give me a little bit of trust here, okay? You don't feel like you're eating cottage cheese when you eat these waffles, but you DO get the added benefit from the protein and a little bit of tangy goodness in the flavor.

How do you make apple cinnamon waffles?

Here's how to put these together:

  • Gather all waffle batter ingredients (except apple) and add to a blender.
  • Blend well.
  • Stir in apple pieces.
  • Grease a waffle maker using butter or cooking spray. Add batter.
  • Make waffles until you use all of the batter.
  • I highly recommending adding extra toppings like more apples, whipped cream, syrup, etc. Enjoy!

These waffles are pure genius! The fact that they are low fat (no fat if you use non-fat cottage cheese - it was all I had), high protein (without protein powder), and wholefoods-based, is really secondary to the fact that they are darn delicious! So light, crispy and filling. And did mention you get to eat three?! Yum, Jordo! :)
