I am thrilled to tell you that it is once again time for pumpkins. There's no need to wait for a fancy pumpkin dessert to get your fix: start your day right with some pumpkin protein waffles!

This waffle mix comes together from scratch and is full of delicious protein and rich pumpkin flavor. On top of that, it's easy and super quick to make.

What do you use for pumpkin flavor?

These waffles use a powerful duo of canned pumpkin and pumpkin pie spice to curb your pumpkin craving. No pre-made mix here!

What kind of waffle maker should I buy?

As with all kitchen appliances, better options are becoming more affordable all the time. My trusty waffle maker Krups waffle maker. It's held up for years, and I like it because it makes four square waffles at a time.

What if I prefer pancakes?

Well, you're in luck! These waffles can become healthy pumpkin protein pancakes by simple pouring this batter on a hot, greased skillet. Boom! It's a pancake.

What goes in pumpkin protein waffles?

Here's the low-down on what goes in these pumpkin protein waffles:

  • low-fat cottage cheese
  • egg whites
  • vanilla
  • cinnamon
  • pumpkin pie spice
  • canned pumpkin
  • toppings: whipped cream & pumpkin pie spice

Wait... cottage cheese?

Yes. Y'all, I promise these waffles are the TRUTH. The cottage cheese ups the protein contents, rounds out the delicious texture, and is INCONSPICUOUS in the overall taste.

You aren't allowed to knock it until you've tried it. I don't make the rules.

Can I make any substitutions?

This is a plate of pumpkin protein waffles. The waffles are light brown, topped with whipped cream, and sprinkled with cinnamon.

You can use any oats you want—including a gluten-free substitute. You might try Greek yogurt instead of cottage cheese, too, or regular eggs in place of egg whites.

The process to make these pumpkin protein waffles isn't all that complicated. It involves throwing the mix together, blending it together, and then popping it in the waffle maker. Here:

  • Gather all ingredients and add to a blender.
  • Blend well.
  • Grease a waffle maker using butter or cooking spray. Add batter.
  • Make waffles until you use all of the batter.
  • Let cool and enjoy!

How do I store pumpkin protein waffles?

Note: you may have to cook these longer than a typical pre-made waffle mix to get them crispy—try it with your own waffle maker and see how it works!

These will keep in the fridge for up to 5 days, and in the freezer for up to 3 months! (Great for meal prep!).

If you need to defrost, pop these in the toaster. They can still get super crispy and delicious!

    I made a double batch of these, substituting vanilla Greek yogurt for the cottage cheese (just bc that’s what I had on hand) - and the waffles turned out above and beyond my expectations!! 100% will make these again! I made them for my parents and myself for a yummy Sunday breakfast and they had the same texture and good taste your regular waffles.

    Absolutely delicious! Super easy and quick to make too! I used a mini waffle maker and got about 6 of em With macros like these, I can make this a staple and not feel guilty about having them so often. haha I topped mine with maple vanilla whipped cream from Aldi and they were great!!

    What oats do you use? All the oats I have are 27g carb for 1/2 cup which is more than this entire recipe. Thanks!

      @Stephanie Carter, We're using Bob's Red Mill Protein Oats now - they have much more protein and bump up the overall protein profile of the waffles!

    Not going to lie, I was a little (okay, a LOT!) skeptical of this recipe based on the ingredients.... the recipe title caught my attention, but the ingredients had me questioning TASTE, but oh my....sooo GOOD!! Another GREAT recipe, Jordo!
