I am thrilled to tell you that it is once again time for pumpkins. There's no need to wait for a fancy pumpkin dessert to get your fix: start your day right with some pumpkin protein waffles!

This waffle mix comes together from scratch and is full of delicious protein and rich pumpkin flavor. On top of that, it's easy and super quick to make.

What do you use for pumpkin flavor?

These waffles use a powerful duo of canned pumpkin and pumpkin pie spice to curb your pumpkin craving. No pre-made mix here!

What kind of waffle maker should I buy?

As with all kitchen appliances, better options are becoming more affordable all the time. My trusty waffle maker Krups waffle maker. It's held up for years, and I like it because it makes four square waffles at a time.

What if I prefer pancakes?

Well, you're in luck! These waffles can become healthy pumpkin protein pancakes by simple pouring this batter on a hot, greased skillet. Boom! It's a pancake.

What goes in pumpkin protein waffles?

Here's the low-down on what goes in these pumpkin protein waffles:

Wait... cottage cheese?

Yes. Y'all, I promise these waffles are the TRUTH. The cottage cheese ups the protein contents, rounds out the delicious texture, and is INCONSPICUOUS in the overall taste.

You aren't allowed to knock it until you've tried it. I don't make the rules.

Can I make any substitutions?

This is a plate of pumpkin protein waffles. The waffles are light brown, topped with whipped cream, and sprinkled with cinnamon.

You can use any oats you want—including a gluten-free substitute. You might try Greek yogurt instead of cottage cheese, too, or regular eggs in place of egg whites.

The process to make these pumpkin protein waffles isn't all that complicated. It involves throwing the mix together, blending it together, and then popping it in the waffle maker. Here:

  • Gather all ingredients and add to a blender.
  • Blend well.
  • Grease a waffle maker using butter or cooking spray. Add batter.
  • Make waffles until you use all of the batter.
  • Let cool and enjoy!

How do I store pumpkin protein waffles?

Note: you may have to cook these longer than a typical pre-made waffle mix to get them crispy—try it with your own waffle maker and see how it works!

These will keep in the fridge for up to 5 days, and in the freezer for up to 3 months! (Great for meal prep!).

If you need to defrost, pop these in the toaster. They can still get super crispy and delicious!

      The serving size (in terms of number of waffles) depends on the size of your waffle maker. The recipe as shown will make 1 serving, but that could be 1 giant waffle or 4 mini waffles. Hope that makes sense.

    Very good! I forgot to pick up egg whites, so I added 2 large eggs instead and it turned out! I was also surprised no sugar was added, so if eating these without a topping with sugar (peanut butter/syrup/etc.), I think I would add maybe a tablespoon (?) of sweetener. I ate these with butter and syrup so it was plenty sweet together! This recipe made me 3 smaller waffles.

      Hi Emily, so glad this recipe turned out well for you! I usually leave out a sweetener because I get that from the toppings, but yes I agree that if you aren't going to be using a topping, something like syrup, honey, etc would work well to add in the batter! Also pro tip: a little dollop of whipped cream pairs SO well with these for some cozy fall vibes.

    I had some left over pumpkin purée, and thought I would try these. Super good and hardy. I sometimes feel hungry soon after eating something sweet for breakfast in the morning, but not these gems! Super satisfying and healthy. I’ll be making them again, left over pumpkin or not!
