Is it just me, or are bite-sized foods better than regular-sized foods?! There's this phrase that "everything is bigger in Texas" and I think that even though I am a Texan, my Midwest roots aren't buying it so I am more inclined towards smaller things.
ANYWAY, regardless of why I like bite-sized items, these pancake sausage bites are my new favorite breakfast!
These pancake sausage bites are so fluffy and delicious! Every bite is packed with soft pancake and pieces of sausage. Not only are you going to get awesome flavor in every bites, but these bites are packed with protein.
Healthy breakfast recipe
Each serving is 320 calories and contains 18 grams of protein. This healthy breakfast recipe is great for all ages. I promise your kids will like them too!
This recipe only requires 3 ingredients so it's quick, easy, and perfect for meal prep. I like to make a batch of these on the weekend and heat them up during the week so they are ready for busy mornings.
Dip them in syrup or take them to-go!

What ingredients do I need?
The recipe only requires 3 ingredients! I love recipes that are EASY and use what I already have in the pantry and this recipe definitely meets those requirements.
- Kodiak Cakes Power Cakes Mix – Kodiak Cakes is the only pancake mix I ever use. I love the flavor, the nutritional components, and how easy it is to make. I use the classic Buttermilk flavor for this recipe, but you could use whatever mix you like the best!
- Turkey Sausage Links - I use a box of pre-cooked turkey sausage links for this recipe, but you can use whatever kind of meat you like best. To ensure the sausage is evenly distributed throughout the bites, I chop them into small pieces.
- Water - You'll need water to mix with the pancake mix. For the ratio, you will use a little less than the amount of mix.
- Syrup - Using syrup for dipping is totally optional!

What substitutions can I make?
This recipe is absolutely one where you can make substitutions. Here are a few options:
- Pancake Mix - I like to use Kodiak Cakes, but you can use whatever kind of pancake mix you already have!
- Turkey Sausage - This is my preference of breakfast sausage, but you can swap for whatever kind of breakfast sausage links you want.
- Syrup - I like to use some syrup for dipping, but you can totally add some syrup or vanilla to the batter before you bake the bites!
What equipment do I need?
The main piece of equipment you need for this recipe is a muffin tin. If you have a mini muffin tin, that would work as well.

How do I make this recipe?
This recipe is SO easy. Here's what you'll do:
- Preheat oven to 350 degrees.
- Spray muffin tin with cooking spray and set aside.
- Combine pancake mix and water. Mix to combine. (Don’t over-mix or the batter won’t rise well!)
- Chop sausage links into small pieces.
- Mix ¾ of the sausage pieces into the batter and stir.
- Pour batter evenly across the 12 spaces of the muffin tin.
- Sprinkle the remaining ¼ of the sausage pieces on top of the muffins.
- Bake at 350 for about 20 minutes, or until middle is cooked through.
- Enjoy with a side of syrup!

What is the trick to fluffy pancakes?
If you're just using a simple mix, the trick is to not over stir! I mix to barely combine the ingredients. This will make the bites extra fluffy!
Can you save pancakes?
I will store these in an airtight container in the fridge for up to 5 days. Just heat them up in the microwave the morning you want them!
Are pancakes eaten hot or cold?
You can eat these pancake bites hot or cold! They taste great both ways. If you want to heat them up, just heat in the microwave. I eat with toppings both ways.

Easy and delicious! These are a quick and easy breakfast item that is great for when you're on the go or in a rush! I made them this morning and they really hit the spot! I used Aldi Chicken Breakfast sausage and it was wonderful! Because my pack only had 7 sausage links, I reduced the pancake mix to 1 and 1/3 cup and reduced the water to 1 cup. I made these for the first time the other day and she was not kidding when she says these go FAST! I already made us a second batch! They are so simple, so easy, and so so good. I added 1/4 cup of syrup to add a little sweetness and to keep me from using so much syrup for dipping, and I think it adds just the right amount of sweetness. (And adds only about 4 carbs per serving)
